As a quick update – this week I submitted all the required applications for federal and state distilling permits. I’m sure there will be a few months of waiting on the governments to process my paperwork, but the wheels are turning.
While we wait for legal approval we’ll be fitting out the distillery building, and hosting some fun spirits tastings to learn more about what our friends and future customers are looking for in a drink. More info to come on that very soon.

Springtime is a time for new arrivals…baby chicks are born, newborn bunnies start hoppin’ around, flowers are sprouting, and most importantly the Phillies fever arrives with the start of baseball season. Not wanting to be left out, Cooper River Distillers also had a new delivery this Spring. All the way from Salvaterra de Miño in Northwestern Spain to Camden, NJ – a beautiful, hand-crafted, copper alembic pot-still. I haven’t named her yet, so I’m open to suggestions on that!
We still have a few months of set-up, paperwork, and licensing in front of us before we can fire this still up and start cranking out delicious artisan spirits, but this is a lovely step in the right direction!
